Ingredients

  • 0.5 cup wild rice
  • 1.5 cups water
  • 8 oz dried bread cubes about 8 cups
  • 6 tbsp unsalted butter
  • 1 yellow onion medium, chopped
  • 2 ribs celery chopped
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • 1 tsp dried sage
  • 0.5 tsp dried thyme
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 cups low-sodium chicken broth
  • 2 eggs large
  • 0.25 cup fresh parsley chopped

Equipment

  • 1 9x13-inch baking dish
  • 1 large skillet

Method

  1. Preheat the oven to 350°F.
  2. Grease a 9x13-inch baking dish.
  3. Combine the wild rice and water in a small saucepan and bring to a boil over medium-high heat.
  4. Cover, reduce the heat to low, and simmer for 45 to 55 minutes, until the rice is tender and some grains have split.
  5. Drain any excess water from the wild rice.
  6. Melt the butter in a large skillet over medium heat.
  7. Add the onion, celery, and mushrooms and cook for 8 to 10 minutes, stirring occasionally, until the vegetables are tender and the mushrooms have released their liquid.
  8. Add the garlic, sage, thyme, salt, and pepper and cook for 1 minute.
  9. Put the bread cubes and cooked wild rice in a large bowl, add the vegetable mixture and parsley, and toss to combine.
  10. Whisk the broth and eggs in a medium bowl.
  11. Pour the broth mixture over the bread mixture and toss until evenly moistened.
  12. Transfer the mixture to the prepared baking dish and cover tightly with foil.
  13. Bake for 30 minutes.
  14. Uncover and bake for 15 to 20 minutes, until the top is golden and the center reaches 160°F.
  15. Let the stuffing rest for 10 minutes before serving.

Notes

For the best texture, make sure the bread mixture is evenly moistened before baking. Refrigerate leftovers for 3 to 4 days; this stuffing can be frozen. Use vegetable broth instead of chicken broth for a vegetarian version.
