Ingredients

  • 6 bacon slices, chopped
  • 1 yellow onion medium, diced
  • 1.5 lb fresh green beans trimmed
  • 2 cup low-sodium chicken broth
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

  • 1 5-quart Dutch oven

Method

  1. Cook the bacon in a 5-quart Dutch oven over medium heat until crisp, 6 to 8 minutes.
  2. Transfer the bacon to a paper towel-lined plate.
  3. Leave 1 tablespoon of bacon drippings in the pot.
  4. Add the onion and cook, stirring, until softened, about 5 minutes.
  5. Add the green beans, chicken broth, salt, and black pepper, then bring to a boil.
  6. Cover and simmer over low heat until the beans are very tender, 30 to 40 minutes.
  7. Stir in the cooked bacon.
  8. Serve.

Notes

For the best texture, simmer the beans until very tender. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is not recommended because the beans can become softer. For a pork-free variation, use turkey bacon.
