Ingredients

  • 2 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp pure maple syrup

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Toss the sweet potatoes with the olive oil, kosher salt, and black pepper in a large bowl.
  4. Spread the sweet potatoes in a single layer on the baking sheet.
  5. Roast for 20 minutes, then turn the sweet potatoes with a spatula.
  6. Roast for 5 minutes more.
  7. Return the sweet potatoes to the bowl and toss with the maple syrup.
  8. Spread the sweet potatoes back on the baking sheet and roast for 5 to 10 minutes, until fork-tender and browned at the edges.

Notes

For even browning, spread the sweet potatoes in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is fine, though the texture may soften after thawing. Avocado oil can replace olive oil if desired.
