Ingredients

Base and flavor
  • 2 cup vanilla Greek yogurt
  • 2 tbsp fresh key lime juice
  • 1 tsp key lime zest
  • 2 tbsp honey
Toppings
  • 0.33 cup crushed graham crackers
  • 2 tbsp shredded coconut
  • 2 tbsp white chocolate chips
  • extra lime zest for garnish

Equipment

  • 1 sheet pan

Method

Prepare and line
  1. Line a small baking tray or container with parchment paper to prevent sticking and make removal easy.
Mix the yogurt layer
  1. In a mixing bowl, combine vanilla Greek yogurt, fresh key lime juice, key lime zest, and honey until smooth and evenly flavored.
Spread
  1. Spread the mixture evenly onto the prepared tray, about 1/2-inch thick so the bark freezes consistently.
Add toppings
  1. Sprinkle crushed graham crackers, shredded coconut, white chocolate chips, and additional lime zest over the top for a crunchy key-lime pie vibe.
Freeze
  1. Freeze for at least 4 hours or until completely firm, then the bark should hold its shape when lifted.
Break and serve
  1. Break into bark-sized pieces, then store frozen in an airtight container and serve straight from the freezer.

Notes

Pro tip: for cleaner bark pieces, freeze until fully firm and break only after the surface looks set (not tacky). Store in an airtight container in the freezer up to 2 months; no thawing needed. For a dairy-light swap, use coconut or lactose-free yogurt in the same amount for a similar tang and texture.
