Ingredients

  • 1.5 lb carrots peeled and sliced into 1/4-inch coins
  • 0.5 cup water
  • 0.25 tsp salt
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 0.125 tsp black pepper

Equipment

  • 1 3-quart saucepan

Method

  1. Combine the carrots, water, and salt in a 3-quart saucepan.
  2. Cover and bring to a boil over medium-high heat.
  3. Reduce the heat to medium-low and simmer, covered, for 8 to 10 minutes, until the carrots are tender when pierced with a fork.
  4. Drain the carrots.
  5. Return the carrots to the pan.
  6. Add the butter, honey, and black pepper.
  7. Cook over medium heat for 2 to 3 minutes, stirring gently, until the butter melts and the carrots are glossy with glaze.

Notes

For even cooking, slice the carrots into uniform coins. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the carrots can turn soft. For a dairy-free option, replace the butter with a plant-based butter.
