Ingredients

  • 4 lb turkey breast bone-in, skin-on, thawed
  • 4 tbsp unsalted butter softened
  • 4 cloves garlic minced
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp rosemary fresh, finely chopped
  • 1 tsp thyme leaves fresh

Equipment

  • 1 9x13-inch roasting pan
  • 1 instant-read thermometer

Method

  1. Heat the oven to 350°F.
  2. Place the turkey breast, skin side up, in a 9x13-inch roasting pan.
  3. Pat the turkey dry with paper towels.
  4. Mix the softened butter, garlic, salt, pepper, rosemary, and thyme in a small bowl.
  5. Gently loosen the skin over the breast.
  6. Spread some of the butter mixture underneath the skin.
  7. Rub the remaining mixture over the skin.
  8. Roast for 1 1/2 to 2 hours, until the thickest part of the breast registers 165°F on an instant-read thermometer without touching bone.
  9. Tent loosely with foil if the skin browns too quickly.
  10. Transfer the turkey to a cutting board and rest for 15 to 20 minutes before carving.

Notes

For the juiciest slices, check the thickest part without touching bone and rest the turkey before carving. Refrigerate leftovers for 3 to 4 days; freezer-friendly for up to 3 months. For a dairy-free swap, use a plant-based butter alternative.
