Ingredients
  

beef brisket
  • 4 lb beef brisket
seasonings and aromatics
  • 1 tbsp olive oil
  • 1 onion 1 large, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt to taste
  • 0.5 tsp black pepper
coca-cola sauce
  • 1 can (12 oz) Coca-Cola
  • 1 cup barbecue sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar

Method
 

Season and sear the brisket
  1. Season the brisket with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
  3. Sear brisket for 2–3 minutes per side until browned.
Slow-cook with Coca-Cola sauce
  1. Place sliced onions in the bottom of the slow cooker.
  2. Place the seared brisket on top of the onions.
  3. Whisk together Coca-Cola, barbecue sauce, Worcestershire sauce, and brown sugar in a bowl.
  4. Pour the Coca-Cola mixture over the brisket.
  5. Cover and cook on LOW for 8–10 hours until fork-tender.
Rest, slice, and serve
  1. Remove brisket and let it rest for 10 minutes.
  2. Slice brisket against the grain.
  3. Spoon sauce over the brisket before serving.
  4. Serve with mashed potatoes, roasted vegetables, or sandwich buns.

Notes

For best texture, don’t skip the rest time—10 minutes helps the juices redistribute before slicing. Store leftovers in a sealed container in the refrigerator for up to 4 days; reheat in the microwave or on the stovetop with a splash of sauce. Freezing is yes: cool completely, freeze up to 2 months, and thaw in the fridge overnight. For a lower-sugar option, use a reduced-sugar Coca-Cola and keep the brown sugar to 1 tsp instead of 1 tbsp.
