Bacon-Wrapped Turkey Breast

Bacon-wrapped turkey breast is seasoned with garlic and thyme, then roasted until the bacon is browned and the turkey reaches 165°F. A 15-minute rest helps keep the slices juicy beneath the crisp bacon.

Ingredients

  • 1 turkey breast roast 2 1/2- to 3-pound, boneless, skinless, thawed, netting removed, and patted dry
  • 2 tbsp unsalted butter softened
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 10 bacon 10 to 12 slices

Equipment

  • 1 9x13-inch roasting pan

Method

  1. Heat the oven to 400°F and set a wire rack inside a 9x13-inch roasting pan.
  2. Rub the softened butter over the turkey breast, then season it evenly with the kosher salt, black pepper, garlic powder, and dried thyme.
  3. Wrap the turkey with overlapping bacon slices, tucking the ends underneath, and place it seam-side down on the rack.
  4. Roast for 55 to 75 minutes, checking after 50 minutes, until the bacon is browned and the thickest part of the turkey reaches 165°F; loosely tent with foil if the bacon darkens before the turkey is done.
  5. Transfer the turkey to a cutting board and rest for 15 minutes before slicing.

Notes

For the juiciest slices, rest the turkey for the full 15 minutes before cutting. Refrigerate leftovers for up to 4 days; freeze for up to 2 months. For a dairy-free swap, use olive oil in place of the butter.
