Ingredients

  • 24 Medjool dates pitted
  • 4 oz goat cheese soft, in a log
  • 12 slices bacon regular-cut, halved crosswise

Equipment

  • 1 rimmed baking sheet

Method

  1. Heat the oven to 400°F.
  2. Line a rimmed baking sheet with foil.
  3. Carefully open each date along the slit where it was pitted, without cutting all the way through.
  4. Fill each date with about 1 teaspoon goat cheese.
  5. Wrap each date with a half slice of bacon and place it seam-side down on the baking sheet.
  6. Bake for 10 to 12 minutes.
  7. Turn the dates.
  8. Bake for another 10 to 13 minutes, until the bacon is browned and crisp.
  9. Let the dates rest on the baking sheet for 5 minutes before serving.

Notes

For crisp bacon, turn the dates after the first bake and keep them seam-side down on the baking sheet. Refrigerate leftovers in an airtight container for up to 3 days; freeze for up to 1 month.
