Make the chili
- Heat the olive oil in a 5-quart Dutch oven over medium-high heat.
- Add the ground chicken, onion, and celery; cook, breaking up the chicken, for 8–10 minutes, until the chicken reaches 165°F and the vegetables soften.
- Stir in the garlic, salt, chili powder, cumin, smoked paprika, and cayenne; cook for 30 seconds, until fragrant.
- Add the tomatoes, chicken broth, beans, and Buffalo wing sauce.
- Bring the chili to a boil.
- Reduce the heat to maintain a gentle simmer and cook uncovered for 20–25 minutes, stirring occasionally, until the chili thickens.
Make the ranch drizzle
- Whisk the sour cream, mayonnaise, buttermilk, dill, garlic powder, and onion powder in a small bowl until smooth and pourable.
- Drizzle the ranch over bowls of chili to serve.
Notes
For the best texture, drizzle the ranch over the chili just before serving. Refrigerate leftovers for 3–4 days; freezer-friendly. For a dairy-free option, use dairy-free sour cream, mayonnaise, and buttermilk.
