Ingredients

For the roast
  • 1 beef chuck roast boneless, 3 1/2- to 4-pound, thawed and excess fat trimmed
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) au jus gravy mix
  • 0.5 cup beef broth low-sodium
  • 2 tbsp pepperoncini brine
  • 8 pepperoncini
  • 0.5 cup unsalted butter 1 stick, cut into slices
For the gravy
  • 2 tbsp cornstarch
  • 2 tbsp water cold

Equipment

  • 1 6-quart slow cooker
  • 1 fat separator
  • 1 2-quart saucepan

Method

Cook the roast
  1. Place the thawed beef chuck roast in a 6-quart slow cooker and sprinkle the ranch seasoning mix and au jus gravy mix evenly over it.
  2. Pour the low-sodium beef broth and pepperoncini brine around the roast.
  3. Arrange the pepperoncini and sliced unsalted butter on top.
  4. Cover and cook on LOW for 8 to 9 hours or HIGH for 5 to 6 hours, until fork-tender and at least 145°F in the center.
  5. Transfer the roast to a platter and tent loosely with foil.
  6. Rest for 10 minutes.
Make the gravy
  1. Strain the cooking liquid into a fat separator, discard the fat, and pour the defatted liquid into a 2-quart saucepan.
  2. Whisk the cornstarch and cold water in a small bowl until smooth.
  3. Bring the cooking liquid to a gentle simmer over medium heat, whisk in the slurry, and simmer for 1 to 2 minutes, until the gravy lightly coats a spoon.
  4. Shred the roast with two forks and serve with the au jus gravy.

Notes

For the best texture, cook until the roast is fork-tender before shredding. Refrigerate leftovers in an airtight container for 3 to 4 days; freeze leftovers yes.
