- Heat the olive oil in a 6-quart Dutch oven over medium heat.
- Add the onion and cook for 4–5 minutes, stirring occasionally, until softened.
- Stir in the garlic, cumin, chili powder, smoked paprika, salt, and black pepper and cook for 30 seconds, until fragrant.
- Add the chicken broth, enchilada sauce, tomatoes and their juices, green chiles, black beans, corn, and chicken breasts.
- Bring to a gentle simmer.
- Cover and cook over low heat for 18–25 minutes, until the chicken reaches 165°F in the thickest part.
- Transfer the chicken to a cutting board and shred it with two forks.
- Put the cream cheese in a medium bowl and gradually whisk in 1 cup of hot soup broth until smooth.
- Stir the cream cheese mixture and shredded chicken into the soup.
- Cook over low heat for 2–3 minutes, stirring, until heated through; do not let the soup boil.
Notes
For a smooth soup, gradually whisk hot broth into the softened cream cheese before adding it to the pot. Refrigerate leftovers for up to 4 days. Freezing is possible, though the cream cheese may separate; thaw and reheat gently while stirring. For a dairy-free version, use dairy-free cream cheese.
